鸡是人类驯化最早的家禽之一，其驯化历史悠久，一般认为，现代家鸡起源于原鸡，原鸡主要分布在亚洲南部和东南部的热带、亚热带地区，包括红原鸡、灰原鸡、绿原鸡和锡兰原鸡等种类，其中红原鸡被公认为是家鸡的主要祖先。有关禽类的驯化时间目前尚无定论，多数学者认为大约在公元前 8000 年至公元前 5000 年。有研究表明，中国、印度和东南亚等地都是鸡驯化的重要中心。例如，中国的一些新石器时代遗址，如河北武安磁山、河南新郑裴李岗等，都发现了鸡骨化石，表明当时鸡已被驯化。在印度，公元前 2000 年左右的文献中也有关于鸡的记载。现在由加州大学戴维斯分校动物科学系 Huaijun Zhou 教授领导的一个国际研究小组首次绘制了鸡基因调控的详细图谱，这一突破可以帮助科学家培育出对禽流感等疾病更有抵抗力的鸡类。
